i had the time of my life in Copenhagen last week. i’ve never eaten so much in my entire life — and the bread and pastries were just mind blowing. (jewish readers cover your eyes) — i had a sausage roll made with pork, apple, and fennel from Lillie Bakery that i haven’t stopped thinking about. the delicate laminated layers were made with butter and lard. the flavors were heavenly!!!
i will write more about the MAD Symposium another day, but for each day of the conference there was a special chef that cooked breakfast and lunch. this salad from ST. JOHN RESTAURANT in London was incredible. It had roasted tomatoes, crispy little gems, and anchovies. it felt like the perfect purpose for not peak tomato season — i’m still thinking about it too, so i have to share it with you for the weekend.
